This Greek crab salad is a delicious, bold tasty salad with Kalamata olives, feta cheese, crab and chick peas. It is a perfect gluten-free and vegetarian lunch!
Not a vegetarian or need some extra protein?
Just add some grilled chicken or steak to the top.
9oz chopped lettuce (romain or Italian blend)
1 small cucumber diced
½ cup Kalamata olives pitted & chopped
1 16oz can chick peas drained & rinsed
½ cup grape or cherry tomatoes chopped
½ cup feta cheese crumbles
1 cup crab meat
½ avocado chopped
½ cup favorite Italian or balsamic vinaigrette dressing
Combine all salad ingredients in a large bowl and combine well.
Drizzle with dressing.
If you are preparing 3 days worth of lunches, separate the salad ingredients into 3 separate bowls and save the dressing for each serving.
